Gorditas (Mexico)
In Spanish, gordita means ‘little fat guy.’ In the world of Mexican food, it refers to a fat little tortilla.
Ingredients
1 ½ cups masa harina
2 teaspoons olive oil
1 teaspoon salt
1 ¼ cups water
1 cup fresh corn kernels
2-3 tablespoons vegetable oil
1. Put all ingredients in a mixing bowl and stir until a dough form. It should have the texture of fresh Play Dough. Roll into balls about the size of a ping pong ball. With your palm, flatten between two small squares of parchment or wax paper. Your gordita should be 4 inches across and ¼ inch thick.
2. Place a heavy frying pan over a medium flame. Brush a few drops of vegetable oil on the gordita and, when the pan is hot, drop it in oiled side down. Cook 2 minutes or so, until a few brown spots appear, then flip with a spatula and cook the other side. Repeat with remaining gorditas.
